Default Monitor/Possible Other Issues

I know it's a lot to read, but please take 5 minutes so my eyes don't bleed trying to use my PC (Working on getting a MAC)

Just had my Dell XPS 600 fixed;

Display Specs:

Dual nVidia 7900 GTx Cards (256mb a piece)
HP 2009m 20" LCD monitor
Dual Monitor Support (not in use)

I had a Dell monitor that came with the PC when I bought it a few years back, no longer in service. Forcing me to buy a brand new one.

I also had to re-format the HD recently and start from scratch, and have a new motherboard installed. The computer works awesome now after being completely re-done no issue there. However, here is my problem;

When I started the computer up (I did install the monitor drivers) obviously it had that shitty 1024x768 default resolution. I went to change it, and realized I couldn't go higher than that. I went into the SLi nVidia control panel and set it so nVidia allowed the computer to recognize higher resolutions.

However, when I set it to higher resolutions, it cuts off parts of the screen and I'm forced to scroll around (which I immediately changed). So, I'm forced to stay at the default 1024x768.

Not just that though, the monitor has 2 settings in the Image Set category (Fit to Screen & Fit to Aspect Ratio), when I do Fit to Ratio it looks like I'm watching a 4:3 movie on a 16:9 screen, which technically I am. When I Fit to Screen, it looks like shit! All stretched out and jagged.

The other Resolutions didn't look jagged or stretched, they just didn't fit. And I should be able to do at least a 1280x800 res. on a LCD Widescreen Display
